Radicchio Salad with Shaved Parmigiano and Crispy White Beans

Ingredients

Crispy White Beans:

  • One can (15 oz) of cannellini, drained and rinsed

  • 1 tablespoon olive oil

  • Salt and pepper, to taste

Vinaigrette:

  • 3 tablespoons extra virgin olive oil

  • 1 tablespoon white wine vinegar or champagne vinegar

  • 1 teaspoon Dijon mustard

  • 1 teaspoon honey

  • 1 teaspoon truffle oil (optional)

  • Salt and pepper, to taste

Salad:

  • 1 head radicchio, washed, dried, and roughly torn or chopped

  • 1/2 cup shaved Parmigiano cheese

  • Freshly ground black pepper, for serving

Method

Crispy Baked White Beans: Preheat your oven to 400°F /200°C. Line a baking sheet with parchment paper. Pat the white beans dry with paper towels to remove as much moisture as possible. Toss the beans with 1 tablespoon of olive oil, salt, and pepper until evenly coated. Spread the beans in a single layer on the prepared baking sheet. Bake for 15-20 minutes, or until golden and crispy. Stir halfway through baking to ensure even crispiness. Let cool.

Simple Vinaigrette: In a small bowl, whisk together the extra virgin olive oil, vinegar, Dijon mustard, honey, and truffle oil (if using). Season with salt and pepper to taste. Adjust the seasoning or ingredients according to your preference.

Assemble the Salad: In a large salad bowl, combine the torn radicchio and half of the shaved Parmigiano cheese. Drizzle the vinaigrette over the salad and toss until the radicchio is evenly coated. Add the crispy baked white beans to the salad and gently toss to combine. Top the salad with the remaining shaved Parmigiano cheese and a few grinds of black pepper.

Serve: Serve the salad immediately, ensuring the beans remain crispy and the radicchio is fresh and crisp.

Notes

The truffle oil is by no means a must, and if you can't find it or don't like Truffle, don't worry; the salad is still delicious without it. Feel free to change the Cannellini beans for a different bean or legume. Chickpeas would also be excellent; play with whatever you've got in your cupboard
