Brunch Plate with Soft Boiled Eggs and Hummus

Serves 4 as a side

Ingredients

  • 4 eggs, soft boiled for 6 minutes and then placed in ice water

  • 1 cup hummus

  • Baby carrots, washed and dried

  • Cucumber, cut into sticks

  • Radishes, washed and trimmed

  • Radicchio leaves, separated

  • Any other fresh vegetables you have in the fridge, prepared as bite-sized pieces or sticks

Method

Soft Boil the Eggs: Bring a pot of water to a boil. Gently lower the eggs into the water and boil for exactly 6 minutes for a soft, slightly runny yolk. Immediately transfer the eggs to a bowl of ice water to stop the cooking process. Once cooled, peel the eggs carefully.

Prepare the Vegetables: While the eggs are cooling, prepare your vegetable selection. Wash and dry all your veggies. Cut cucumbers into sticks, trim the radishes, separate radicchio leaves, and prepare any other vegetables as needed.

Assemble the Brunch Plate: Place the hummus in the center of a large serving plate. Arrange the soft-boiled eggs and prepared vegetables around the hummus. Drizzle olive oil over all of the veg and eggs, season everything with salt and pepper and serve.
