Summer Salsa & Chicken

Ingredients
For the salsa:
• 6 Roma tomatoes, halved and deseeded
• 2 shallots, finely diced
• 2 tbsp white wine vinegar
• 1/3 cup green olives, pitted and sliced
• 1/3 cup parsley, finely chopped
• 4 tbsp olive oil
• Pinch of salt (to taste)
For the chicken:
• 2 chicken breasts, pounded to an even thickness
• Olive oil (enough to coat the pan)
• Salt and pepper (to season the chicken)
Method
In a small bowl, combine the diced shallots with white wine vinegar and a pinch of salt. Let sit for 4 minutes to soften and enhance flavour.
In a large bowl, mix the tomatoes, green olives, parsley, and olive oil. Add the soaked shallots along with the vinegar and stir to combine.
Taste and adjust seasoning with more salt if needed. Set aside.
Heat a large pan over medium-high heat and add enough olive oil to coat the entire surface.
Season the chicken breasts with salt and pepper on both sides.
Place the chicken in the pan and sear for 4-5 minutes per side, or until cooked through and the juices run clear. Remove from heat and let rest for a few minutes.
Plate the chicken breasts and spoon the summer salsa generously over the top.
Notes
This salsa pairs wonderfully with all protein, it would be delicious on fish or steak as well!
