Lamb Skewers

Serves 4
Ingredients
• 800g lamb, cut into thick cubes ( I used leg meat)
• 1 tsp dried oregano
• 1 tsp dried rosemary
• 1 tsp paprika
• 2 garlic cloves, minced
• Juice of 1 small lemon
• 1 tsp salt
• 2 tbsp olive oil
Method
In a large bowl, combine oregano, rosemary, paprika, minced garlic, lemon juice, salt, and olive oil. Mix well.
Add the lamb chunks to the bowl, tossing to coat evenly. Cover and marinate for at least 30 minutes (or overnight in fridge).
Thread the marinated lamb chunks onto skewers. If using wooden skewers, soak them in water for 15 minutes beforehand to prevent burning.
Preheat your BBQ to medium-high. Cook the skewers for about 3-4 minutes per side, or until cooked to your liking or heat a grill pan over medium-high heat. Cook the skewers for the same duration, turning to ensure even cooking. I like my lamb slightly pink in the middle still. I also grill a few halved lemons to squeeze over the cooked skewers (optional).
Notes
Enjoy the lamb skewers with your favourite toppings. Mine are garlic yogurt, pita bread, a crunchy tomato and cucumber salad, and a fresh cabbage slaw.
