Ginger Spring Onion Chicken

Serves 2

Ingredients

2 boneless, skinless chicken breasts

3 spring onions, thinly sliced

½-inch knob of ginger, cut into matchsticks

1 small chilli, thinly sliced (optional)

2 cloves garlic, thinly sliced

1 handful mint leaves, thinly sliced

¼ cup avocado oil

Juice of 1 lime

½ tbsp honey

Generous pinch of salt

2 tbsp Sesame seeds (optional)

Method

Bring a pot of water to a boil, enough to cover chicken.

Add the chicken breasts, cover with a lid, turn off the heat, and let them rest in the hot water for 30 minutes.

In a heatproof bowl, add the spring onions, ginger, chili, garlic, and mint leaves.

Heat ¼ cup avocado oil until hot but not smoking. Carefully pour the hot oil over the ingredients in the bowl to lightly fry and release their flavours.

Stir in the lime juice, honey, and salt. Mix well.

Slice or shred the poached chicken and arrange on a plate.

Spoon the warm ginger spring onion sauce over the chicken.

Finish with sesame seeds.
