Creamy Coconut Poached Chicken

Ingredients

2 chicken breasts
Water (enough to cover chicken)

For the coconut sauce:
1 can (400ml) coconut milk
Juice of 1 lime
2 kaffir lime leaves (optional)
• 1 tbsp fish sauce

Method

Boil a pot of water large enough to do the chicken breasts and with enough water to cover them.

Add the chicken breasts, cover with a lid, and turn off the heat.

Let the chicken sit in the hot water for 30 minutes.

In a separate pot, add coconut milk, lime juice, kaffir lime leaves (if using), and fish sauce.

Simmer on low heat for 10 minutes, allowing the flavours to infuse.

Once the chicken is cooked, slice it and mix it through the warm coconut sauce.


Notes

Serve the coconut-poached chicken over salad, rice or noodles!
