Herbed Koftas with Bulgur Salad

Serves 4
Ingredients
For the Koftas:
500grams Beef mince
2 tablespoons almond flour
1 egg
1 teaspoon cumin
1 teaspoon paprika
1/4 teaspoon cinnamon
1 crushed garlic clove
1/4 cup chopped parsley
Salt, pepper, and chili flakes to taste
1 tablespoon pomegranate molasses (optional) for topping
For the Bulgur Salad:
3 cups cooked bulgur
1 diced cucumber
1/2 small red onion, diced
A handful of fresh parsley and mint, chopped
Drizzle of olive oil
Juice of half a lemon
Pinch of salt and pepper
For the Sumac Yogurt:
3/4 cup Greek yogurt
1 clove garlic, minced
Juice of 1/2 lemon
1/2 teaspoon of sumac
Salt and pepper to taste
To Finish:
A sprinkle of slivered almonds
Pomegranate seeds
Method
Prepare the Koftas: In a mixing bowl, combine the mince, almond flour, egg, cumin, paprika, cinnamon, crushed garlic, chopped parsley, salt, pepper, and chili flakes. Mix all the ingredients together (except for the molasses) and shape into 8 equal koftas.
Cook the Koftas: Heat up a pan or skillet with a drizzle of oil. Cook the koftas for 8-10 minutes until fully cooked through. Once cooked, optionally drizzle with pomegranate molasses and gently toss them on the hot plate, coating them evenly.
Make the Bulgur Salad: In a large bowl, mix the cooked bulgur, diced cucumber, red onion, chopped parsley, and mint. Drizzle with olive oil and lemon juice, then season with salt and pepper. Toss to combine.
Prepare the Sumac Yogurt: Combine Greek yogurt, minced garlic, lemon juice, sumac, salt, and pepper in a small bowl. Stir well until all ingredients are thoroughly mixed.
Assemble the Dish: Serve the grilled koftas alongside the warm bulgur salad. Dollop the sumac yogurt over or beside the koftas. Finish the dish with a sprinkle of slivered almonds and pomegranate seeds for a burst of color and crunch.
Notes
Feel free to substitute bulgur with rice or any grain that you might have lying around in the cupboard, from quinoa for an extra protein boost to couscous for a lighter touch. Whether you opt for beef, lamb, chicken, or even a plant-based mince, the koftas can be adapted to whatever you have on hand or prefer.
