Zingy Poached Chicken

Ingredients

  • 2 chicken breasts, brought to room temperature

  • Water, for poaching

For the Dressing:

  • Juice of 1 lime

  • 2 teaspoons sesame oil

  • 1 tablespoon olive oil

  • 2 spring onions, finely chopped

  • A small handful of coriander, chopped

  • A small handful of mint leaves, chopped

  • 2 teaspoons sesame seeds

  • 2 teaspoons rice wine vinegar

  • 2 teaspoons honey

  • 3 teaspoons fish sauce

Method

Prepare the Chicken: Fill a saucepan with enough water to submerge the chicken breasts completely. Bring the water to a boil.

Poach the Chicken: Place the chicken breasts in the boiling water and cover with a lid. Once the water returns to a boil, immediately remove the saucepan from the stove and set it aside for 25 minutes.

Make the Dressing: In a mixing bowl, combine the lime juice, sesame oil, olive oil, chopped spring onions, coriander, mint leaves, sesame seeds, rice wine vinegar, honey, and fish sauce. Whisk well and taste for seasoning, adjusting if necessary.

Serve: Remove the chicken from the water and slice it. Arrange the sliced chicken on a serving plate and generously drizzle with the dressing. Serve with your choice of rice, salad, or noodles for a complete and zesty meal.

Notes

One of the great things about this recipe is how hands off the chicken is, you can literally leave it in the pot un disturbed for up to an hour and the chicken will still remain juicy and succulent. This is truly a fail proof method of poaching your chicken. Another fun way to add some extra flavor to this dish is to add some additional aromatics or flavorings to the poaching water, throw in some lime leaves or a dash of soy sauce to really crank the flavor, have fun and experiment with it.
