Simple Leaf Salad

Ingredients

Salad

  • 1 head butter lettuce, leaves separated and washed

  • ½ head radicchio, leaves torn and washed

  • ¼ cup flat-leaf parsley leaves, washed

  • 3 tbsp chives, finely chopped

Dressing

  • 1 small shallot, finely minced

  • 3 tbsp white wine vinegar

  • 1 tsp Dijon mustard

  • 1 small garlic clove, minced

  • big pinch of salt and pepper

  • ⅓ cup extra virgin olive oil

  • 1 tbsp honey

Method

In a small bowl or jar, combine the minced shallot, white wine vinegar, and salt. Let sit for 5 minutes to mellow the shallot's sharpness.

Whisk in the Dijon mustard, garlic, and black pepper. Slowly drizzle in the olive oil while whisking until emulsified. Stir in the honey and adjust seasoning to taste.

Wash and dry all leafy ingredients thoroughly. In a large bowl, combine the butter lettuce, radicchio, parsley, and chives.

Drizzle the vinaigrette over the salad just before serving. Toss gently to coat and serve immediately.

Notes

If you want to prep ahead make the dressing and store it in a jar in the fridge ready for serving. I also wash and dry the leaves ahead of time, storing them in the fridge covered with a tea towel.
