Cabbage, Mint and Carrot Salad

Serves 4

Ingredients

  • 1/2 medium purple cabbage, thinly sliced

  • 1 small red onion, thinly sliced

  • Juice of 2 lemons

  • 1 large carrot

  • A handful of fresh mint leaves, roughly chopped

  • Extra virgin olive oil, for drizzling

  • Salt, to taste

Method

Marinate the Cabbage and Onion:In a large mixing bowl, combine the thinly sliced purple cabbage and red onion. Squeeze the juice of 2 lemons over the cabbage and onion. Add a pinch of salt, then toss everything together until well coated. Set the mixture aside for at least 30 minutes. This process will soften the cabbage and onion making them more enjoyable to eat. The juices that are extracted from the cabbage and onion create their own beautiful purple dressing.

Assemble the salad: Just before you're ready to serve the salad, take the carrot and use a vegetable peeler to shave it into thin ribbons straight into the salad bowl with the cabbage. Toss in the chopped fresh mint for a burst of freshness.

Dress and Serve:Drizzle extra virgin olive oil over the salad, and add another pinch of salt to taste. Toss the salad gently to combine all the ingredients and coat them in the dressing.

Notes

The cabbage and onion mixture can be stored a few days ahead in the fridge, I find the longer you let them marinate in the lemon juice the better. This is a great dinner party salad as it can be pre made and then when you go to serve simply add the carrot and mint. Its such a minimal effort salad but it looks and taste beautiful. I use this salad all the time its delicious in tacos to add a freshness and crunch or with any grilled meat.
