Roasted Vanilla Peaches

Serves 4

Ingredients

5 ripe peaches, quartered and stone removed
1 vanilla pod, split

2 tablespoons honey
¼ cup water

Method

Preheat the oven to 180°C (350°F).

Arrange the peach quarters in a roasting tray.

Scrape the vanilla seeds from the pod and mix them into the peaches. Add the empty pod to the tray for extra flavour.

Drizzle over the honey and pour in the water.

Cover the tray with foil and roast for 30 minutes.

Remove the foil and continue roasting uncovered for 15 minutes until the juices are sticky and the peaches slightly caramelised.

Notes

I like to serve them warm over thick yogurt or cream.
