Fruit Salad with Passionfruit, Mint, and Lime Dressing

Serves 6

Ingredients

  • 2 cup grapes, halved

  • 3 mango, peeled and diced

  • 2 cup blackberries

  • 2 cup strawberries, hulled and quartered

  • 6 passionfruits (4 for dressing, 2 for topping)

  • A small handful of mint leaves, finely chopped

  • Zest of 1 lime

Dressing

  • Pulp of 4 passionfruits

  • Finely chopped mint (from above)

  • Zest of 1 lime

Method

Prepare the Fruit: In a large bowl, gently combine the grapes, diced mango, blackberries, and quartered strawberries.

Make the Dressing: Cut the passionfruits in half and scoop out the pulp of 4 into a small bowl.Add the finely chopped mint and the zest of one lime to the passionfruit pulp. Mix well to combine.

Dress the Salad: Pour the passionfruit dressing over the prepared fruit in the bowl. Gently toss the fruit to ensure it's evenly coated with the dressing. Be careful not to break the more delicate fruits like the berries.

Add the Finishing Touches: Cut the remaining 2 passionfruits in half and place on top of the salad to serve. Delicious with thick yoghurt or vanilla ice cream!
