Ingredients
Candied Nuts:
1/2 cup pecans (or nuts of your choice)
2 tablespoons sugar
1 tablespoon butter
Pinch of salt
Whipped Cream Yoghurt:
1.5 cups thick Greek yoghurt
1.5 cups heavy whipping cream
1/4 cup icing sugar
2 teaspoons vanilla essence
1/3 cup Dulce de leche (store-bought)
Additional:
1 banana bread (store-bought or homemade), cut into chunks
3 bananas, chopped on a diagonal
Method
Prepare the Nuts: In a skillet over medium heat, melt the butter. Add the nuts, sugar, and a pinch of salt. Cook, stirring frequently, until the nuts are evenly coated and the sugar has caramelized, about 3-5 minutes. Spread the candied nuts on a piece of parchment paper and allow them to cool completely. Break apart any large clumps.
Whip the Cream: In a large bowl, whip the heavy cream and icing sugar together until soft peaks form. Gently fold in the Greek yoghurt and vanilla essence, continuing to whip until just combined. Swirl the Dulce de leche through the whipped yoghurt cream mixture with a spatula, creating marbled streaks.
Assembly: Begin with a layer of banana bread chunks at the bottom of your trifle bowl. Spoon a generous layer of the caramel cream over the banana bread. Layer the sliced bananas and a sprinkling of candied nuts over the cream. Continue layering banana bread, caramel cream, bananas, and candied nuts until all ingredients are used, finishing with a layer of the cream and nuts on top.
Notes
This dish looks seriously impressive; whenever you’re asked to bring a dessert next, this is the one! It is so easy to make; feel free to make your own banana bread and caramel if you wish, but I promise you it will still taste and look fabulous if you want to save some time and buy it from the shops.
