Ingredients

  • 2 handfuls of fresh basil leaves

  • 1 cup extra virgin olive oil

  • Salt, to taste (optional)

Equipment:

  • Blender or food processor

  • Fine mesh strainer or cheesecloth

  • Small saucepan

  • Jar or bottle for storage

Method

Prepare the Basil: To preserve the vibrant green color, you can blanch the basil leaves. Bring a pot of water to a boil, and have a bowl of ice water ready. Submerge the basil leaves in the boiling water for 15 seconds, then immediately transfer them to the ice water to stop the cooking process. Squeeze off the extra water and put the basil into a blender.

Blend Basil and Oil: Add the olive oil to the blender and a pinch of salt. Blend on high until the basil is finely chopped and the oil has taken on a green hue, about 30 seconds to 1 minute.

Strain the Oil: Set a fine mesh strainer over a bowl or pitcher, and line it with cheesecloth if you have it. Pour the basil and oil mixture through the strainer.

Store the Basil Oil: Transfer the strained oil to a clean jar or bottle. Seal tightly and store in the refrigerator. Use within 1-2 weeks for the best flavor.

Serving Suggestions

  • Drizzle basil oil over fresh tomatoes and mozzarella for a twist on caprese salad.

  • Use it as a finishing oil for grilled vegetables, fish, or chicken.

  • Stir into pasta or risotto for an extra burst of flavor.

  • Serve as a dipping oil with crusty bread.

Notes

You can use any soft herbs to make an oil, use a combination of whatever you have at home. Its a great way to use up herbs that have seen better days!
