Za’atar Lemon Chicken

Ingredients
4 chicken Marylands
1 tsp paprika
1/2 tsp garlic powder
1 tsp za'atar
1/2 tsp oregano
1/2 tsp turmeric
A generous pinch or two of salt
A few cracks of black pepper
3 tbsp olive oil
1 lemon, sliced
Method
Marinate the Chicken: In a small bowl, combine the paprika, garlic powder, za'atar, oregano, turmeric, salt, and black pepper to create the spice mixture. Rub this mixture all over the chicken pieces, ensuring they are well coated. Set aside for 20 minutes to marinate, allowing the flavours to infuse.
Preheat the Oven: While the chicken is marinating, preheat your oven to 200°C (392°F).
Prepare for Roasting: Arrange the chicken Marylands on a baking tray. Scatter the sliced lemon pieces around the chicken. Drizzle the olive oil evenly over the chicken and lemons, ensuring the meat is well coated.
Roast the Chicken: Place the tray in the preheated oven and cook for 40 minutes.
Char and Finish: After 40 minutes, remove the chicken from the oven and baste it with the juices collected on the tray. Increase the oven temperature to its highest temperature and switch to the grill/broiler setting. Grill the chicken for an additional 3 minutes, or until the skin is beautifully browned and crisp. Keep an eye on it to prevent burning. The chicken is ready when it reaches 74°C (165°F) internal temperature and the juices run clear when pierced.
Serve: Allow the chicken to rest for a few minutes after removing it from the oven then serve it with your favourite salad!
