Green Olive & Tuna Pasta

Serves 4

Ingredients

1 packet of your favorite pasta 450g (16 oz)

1/4 cup olive oil

4 garlic cloves, finely chopped

Zest/ juice of 1 lemon

1/2 tsp red chili flakes (adjust to taste)

1/2 cup fresh parsley, finely chopped (plus extra for garnish)

200g (7 oz) good-quality tuna in olive oil (drained)

1 cup green olives, pitted and halved

Salt and freshly ground black pepper, to taste

Method

Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain and set aside.

Prepare the Sauce: In a large skillet or pan, heat the olive oil over medium heat. Add the garlic, lemon zest, chili flakes, and parsley. Cook for 1-2 minutes, stirring frequently, until fragrant.

Add Tuna and Olives: Gently stir in the tuna, breaking it into chunks with a wooden spoon. Add the green olives and cook for another 1-2 minutes, just to warm through.

Combine with Pasta: Add the cooked pasta to the pan and toss everything together. If the mixture feels dry, add a splash of the reserved pasta water to loosen it up. Stir in the lemon juice and season with salt and pepper to taste.

Serve: Divide the pasta among serving plates or bowls. Garnish with additional parsley, a drizzle of olive oil, and a sprinkle of chili flakes if desired.
