Mediterranean Half Salmon

Ingredients
1/2 side salmon fillet
800g cherry tomatoes
10 garlic cloves, thinly sliced
8 sprigs of fresh oregano
1/4 cup olive oil, plus extra for drizzling on the salmon
Salt and freshly ground black pepper, to taste
1 lemon, cut into round slices
Instructions
Tomato Topping: Preheat your oven to 150°C (300°F). In a roasting tin, combine the cherry tomatoes, sliced garlic cloves, oregano sprigs, and 1/4 cup olive oil. Season generously with salt and pepper. Cover the tin with a lid or foil and place in the oven to cook for about an hour, until the tomatoes are soft and bursting with flavour.
Prepare the Salmon: After the tomatoes have been cooking for about 35 minutes, start preparing the salmon. Drizzle the salmon fillet with olive oil and season well with salt and pepper. Arrange lemon slices over the salmon, scattering them to cover most of the surface.
Cook the Salmon: Increase the oven temperature to 180°C (350°F). Place the salmon in the oven and cook for 25 minutes, for a medium cook on the salmon, give or take 5 minutes depending on your preference.
Assemble the Dish: Once the salmon is cooked to your liking, remove it from the oven. Carefully uncover the roasted tomatoes. The tomatoes should be soft, fragrant, and infused with garlic and oregano. Spoon the roasted tomato topping over the salmon, ensuring to include the juices for added flavour.
Final Seasoning and Serving: Season with a sprinkle of salt and pepper and serve on a large plate or baking tray.
Notes
This dish is a real table centerpiece perfect for any special occasion. For a little handy hack you can cook the tomatoes in the morning and leave them out covered with a lid on, then simply place them back in the oven with the salmon to warm them up again for the last 10 minutes of cooking.
